This is certainly the big problem with my legacy Four-Thirds cameras.
There is absolutely no room for error. If you blast the highlights,
they are gone and nothing good will come of it. Like I said, it's a
tightrope walk sometimes. However, portraiture or any time where you
can really make the midtones land midtone in-camera, is the bailiwick
of the Olympus cameras. The old E-1 actually underexposes a little bit
in order to protect the highlights and a slight boost is required to
recenter the midtones.

The talking heads on youtube are big fans of the Sonys, and almost
always repeat the same basic settings. -100 highlights, +100 shadows,
White to clip, Black to clip, add some magenta. Two gradients and one
circle adjustment adding localized warmth and "Bob's Your Uncle." The
problem is if the lighting is inconsistent across the scene, there can
be nasty colorcasts in portions of the images. Selecting a different
profile will help neutralize some things, but generally speaking,
Adobe Color usually is the safest approach for Sony files. If you try
these same settings on any other camera you'll be spooning your
eyeballs out.

With last night's picture, there are a couple adjustments I'd like to
make to it, but I do think I've gotten pretty close to the most I can
get out of it. The E-1's sensor is glorious, but it is also very
unforgiving if you run the highlights up too high.
