If you want to figure out the EVF latency, use another camera and a stopwatch.

Have the camera being tested aimed at the stopwatch. Take your other
camera and have both the live-view of the tested camera and the
stopwatch visible.

Take the picture. You'll see how much of a delay the liveview induces.
