I'm getting in late on this thread, but I've been experimenting with a
number of packages recently.  The one that I like the most is Photovista.

All these images were roughly 13000 x 4000 pixels and between 24mb and 36mb
as JPEG.  I resized them for the web, of course, to make them viewable, but
at the larger size there is a heck of a lot of information.  All were taken
vertically, with around 30% overlap, using lenses ranging from 18mm to 24mm
(35mm equivalent).  All were handheld.

All were just stitched together today, as this is my current project, and I
haven't printed any yet. My first try is going to be on my 1280, with 13"
wide roll paper.  Assuming that goes well, I'm going to try the 7600 with
24" wide roll paper.

All will require considerably more work in Photoshop, but I resized them and
put them up quickly to enter the discussion :)

I'm particularly fond of the last one. The first three have limitations, but 
I am still learning how to shoot these properly. I am not convinced that a 
tripod with perfect registration is necessary.  Where I go to shoot, it is 
also not practical.
