The transliteration that resulted in 'Poutine' is a French cultural artifact 
and this results in a homographic collision with the notorious Canadian dish. 
Also, the fact that food is at the heart (gut?) of culture, which explains the 
popularity of Jose Bove, for instance (tasted his Roquefort once, was 
excellent). I'll bet recipes predated other forms of (oral) literature. {Phil}
