I've found that green chile recipes are even harder to prise from people's
clenched fists around here. I agree with you re the heat, which is why I'm
hopelessly addicted to New Mexico green chile now. It can vary widely in heat
from green bell pepper to habanero, but usually it's got just enough heat to
get the endorphins flowing, and IMHO the flavor is not to be beat. My ideal
meal is one that causes me to start sweating just as I am finishing it, then
another beer to cool down again. For people who like VERY hot food, I
recommend the Horseman's Haven (on Cerrillos a bit north of interstate 25).
It's very tasty, but I was sweating after bite number one.

Well, I sit corrected. Next time I go, I should pay more attention, rather
than drooling over everything :)
