I think you'll find the OM series very simple compared to all the
rest!

I'd suggest the 3ti if you stay long periods in the cold taking pix.
The shutter works without batteries. But no auto-exposure except for
TTL flash control. ~$1000 tho The 3 lacks flash TTL ~$500

Otherwise the 4 or 4t/4ti which has auto-exposure but whose shutter
depends on batteries. ~$500

The 3 & 4 have "multi-spot" metering which means that you can measure
the brightest part and darkest part of the picture & the meter will
average them for the exposure. They also have hilite & shadow
buttons. You spotmeter the brightest part you want detail in, press
hilite, and it shifts the exposure so that area is exposed as a
highlite, but keeping detail, and similarly for the shadow button.

The 2s takes but one spot measurement but has a "program" mode which
adjusts both aperture and shutter. ~$300

The 2 & 2n have no spot. ~$200

The 4's & 2's all have TTL autoexposure during exposure up to several
minutes.

Your choice!
