Velveeta should never be considered as a legitimate cheese anything. But,
I have to admit that it does make a nice base for a cheese dip as it will
readily melt in a double-boiler without scorching. Simply add some freshly
grated sharp cheddar and other flavourings after the Velveeta has thoroughly
melted to improve the flavour.
When I was a kid, Velveeta and catsup/ketchup sandwiches were a common
evening snack. So was peanut butter or Cheese Whiz (worse than Velveeta) on
celery.
     Anyone here remember "Squeeze Cheese"?
