If Carol has gone gluten-free because of arthritis problems with gluten,
she might do what I did and try flour imported from Italy.  The gluten
problem is only with USA wheat which has been modified so much it is no
longer the same as the wheat our grandparents cooked with.  Italian flour
causes no problems and I use it to make pasta and bread and pizza.  I order
mine from Amazon.
