"Later" is an adjective and places something in time relative to
something else, e.g. "The groom arrived on time, the bride arrived
later". "Latter" is also an adjective (but sometimes it looks like a
noun) and is used to refer to the most recently listed of a list of
things, e.g. "the black car arrived first and then the white car, the
latter containing the bride". Note that "latter" refers to the most
recently *listed*, not the most recently occurred, e.g. "the top
positions in that race went to Montoya, 3rd, Schumacher, 2nd and
Button, giving the latter his first win". Button is "the latter" even
though he finished first.

Unless someone knows better.
