What everyone else said plus:
Point Lobos just South of Carmel is a must. The drive down Hwy 1 from
there to San Simeon to Hearst Castle is breathtaking. Hearst Castle is
an experience.

Kings Canyon and Sequoia National Parks are beautiful and less crowded
than Yosemite.
