The newer films may have better grain, contrast, accutence, etc, but lack
the facility to *manipulate* their behavior.  The older emulsions,
particularly the thicker ones like Kodak's Royal pan, respond in very
predictable ways to changes in exposure and processing over a broader range.
The newer films, with their very thin emulsion layers, respond to a much
lesser degree.

This ability to manipulate the development process with time, temperature,
developer type (or personal concoction) agitation method and so on is the
essence of control.  The newer films have the advantage for rendering the
scene accurately at the expense of being able to bend it to meet one's
vision.
