If you leave the old glue, it will add a thickness to the mounting surface where
you are regluing the mirror.  This thickness, while a fraction of a millimeter,
will change your finder focus / mirror angle, so infinity will no longer come
in.
Off course, be careful to glue the mirror in with the coated surface "up".
