Given my given name, I have a special interest in this matter. I can be
quite certain that 53 years ago I was taught that Piers' name should be
rendered thusly. I have more recently been convinced that " Piers's " is
acceptable.

For the gerund, I refer you to yesterday's post by P. Dant. It's a
participle, methinks, not a gerund.
