It all sounds good to me but for the gluten free part. I would prefer a 
traditional crust.

Mind you. there are some good cornmeal crust pizzas available around these 
parts, and just the crusts to make your own. 
But for those toppings, I'd go with wheat.

Rules? For Pizza? We don't need no stinkin' rules!
