I don't know anything about the ebay products or sellers but I believe 
that Katz Eye Optics is the premier seller for aftermarket digital 
camera focusing aids.

With some cameras, fitting the aftermarket split image screen has some 
effect on metering or some other side effect but the Katz Eye link 
states there is nothing adverse about the Oly conversion.  Also read 
about "Katz Eye Plus" and their "OptiBrite treatment which is designed 
to solve the problem of split image blackout with slower lenses.

I've never used an Oly digital but the things that can cause shutter 
delay are metering and focusing.  I don't think the meter would be slow 
in a modern E camera but the camera could be hunting a bit on focusing. 
  I'm not familiar with The E things but Canon digitals (via "custom 
function" settings) have the capability to remove the autofocus control 
from the shutter button and place it around on the back of the camera 
where it falls under your thumb.  That's what I do and, although the 
camera is on autofocus about 99.9% of the time, I am always in direct 
control of the moment of focus and that is generally separate from 
exposure and firing the camera.  If the camera is focused (or thinks it 
is) if will fire instantly.  To check your 500 and 510 for the cause of 
the delay just put it in manual focus and see if it fires instantly.  If 
it does then try to find whatever control exists (if it does) to move 
the focus control off the shutter button.

If you have subjects in motion I'm sure the camera has an autofocus mode 
to handle it.  Canon's have two related moving subject modes.  One is 
for initially static subjects which may start to move and the other is 
for subjects in continuous motion.  I'm sure the Olys must have 
something similar.
