I am very aware of that point. It was a significant part of my 
evaluation of the 5D before I bought it. It was also the reason I tested 
the APS-C sized center part of the 5D sensor against the 300D sensor.

My theory was that I could crop the 5D image to get the same 1.6 
multiplier effect on lens fl as the 300D gives while still getting the 
full frame for other uses and existing wide angle lenses. In fact, as 
I've posted before, it turned out that the portion of the 5D sensor, 
although having fewer mps, clearly resolved more detail than the 300D. I 
really do get to have my cake and eat it too.

The problem is that this can only be carried at far as lens resolution 
will support it. No matter how many pixels you have, a 28 mm lens 
doesn't resolve fine enough detail to be cropped to a 300 mm FOV without 
being very fuzzy.

So yes, that idea actually works, but not as far as one would like. 
Still, 300 mm acting like 500 mm is quite nice.
