A great "tool" for holding the shaft is a spool from a spent 35mm film
cartridge. Take the little plastic spool out of the 35mm film canister and
put it in the body. You can now hold it with your fingers as you unscrew
the rewind knob. If the spool starts to slip, just put a screwdriver in the
slot where the film goes into the spool. Using this method you won't have to
worry about damaging the rewind shaft. Eventually the plastic in the spool
breaks so keep a few extras around.
