I'm quite certain that if we want to know the real reason for this, someone
has obtained a US government grant for an extraordinary amount of money to
research it.  We can just ask them!

I suspect cattle are devout followers of the "Harvard Law of
Experimental Biology", which in essences says, "No matter how carefully
all the conditions of the experiment (temperature, light, humidity, etc)
are controlled, the experimental organisim will behave as it damn well
pleases!"
