I did this too. Got written prices for new replacements (for those still
available), and those only available second hand I got the KEH value for
Excellent +, converted for currency exchange and added a bit. The insurance
company was happy with this.

Dave, talk to your insurance man, without giving him all these details,
just that you have not saved receipts for your equipment over the years.
Most likely they will accept a written valuation from a local camera
store/dealer as verification of the values. I once had to do this.
