Susan,

Yes.  Post scanning, change your mode to Greyscale (Image/Mode/), then
browse your filter menu under "Sketch" -- there's lots of options to choose
from re sketching style.

I'm not at my home system w/PS6 right now -- hope my directions are
accurate...
