Several people said a lot of suggestions above a trip in Italy.
Since I live in Italy, I would only spend a word about theft in Italy: you
only have to use common sense, and not to leave the camera, lenses or bag
alone. Said that, you have to be carefull particularly in the south of
Italy
About the lenses to bring, when I go around with my stuff, I pack all
things in a bag of around 30x20x15 cm (probably smaller), and take an OM-1,
an OM-4, a 21/3.5, a 28/2, a 50/1.8 and a 135/2.8. I bought the 21 a couple
of years ago, and I found it very useful, both for landscape and
architecture.
