Superia 800 has a very wide latitude, and underexposing by 1/3
shouldn't have produced any pronounced effect. The yellowing was
likely the result of incandescents plus yellow windows. The "horrible
graining" shouldn't have been an issue. While superia 800 is grainier
than, say, superia 400, it is only subtly so, and shouldn't be
readily apparent on a properly processed and printed 4X5 print.

It may be worth asking them to re-print some of the offending
negatives, correcting for the yellow cast to see if that helps.
