This whole exercise has the potential to be really difficult if you want to
get perfect colour balance.  Consider the fact that all these different
light sources are coming from different directions (flash from camera,
fluorescent from overhead daylight from front/side), so that given any
object in the shop, some parts will be reflecting light from one source
while other parts will be reflecting light from one or several of the other
sources.  Your only real hope is to overpower (by 2 stops) all other light
sources by 1 light source.  What about turning off the fluorescents, using
mainly daylight with a bit of flash fill ?
