I don't know if they can be fired from a single pole switch or not, but the cost
of a double pole switch isn't much more than a single pole switch so why not
buy the double pole and be safe?  You still have to run a seperate cable, or
wire pair, to each winder so why screw around?  Just get the double pole
switch and don't worry about it.  That way you don't have to worry about
polarity or which winders you are using.
