Hello Michael, if you scan as RGB, the images will be colour, with a slight sepia cast. To transform these to B&W you can use the desaturate command. Another (interesting) option is to convert from RGB colour to LAB colour. Switch to the channels, end than delete the A & B channels, just keeping the lightness channel. Then you can adjust as you like and convert back to B&W /RGB.
