I don't understand why you would not meter with your final composition. Surely, 
you want a properly exposed image, no matter where in the image circle it sits?

I use TTL auto on my shift shots, EXCEPT when I'm doing panoramas, then I check 
the exposure between one side and the other and split the difference.
