Brian,

Pop Photo frequently uses images on its cover using digital cameras 
as well.  At that size I don't think it matters much what format is 
used.  Probably even APS would give a sharp, well realized image for 
the cover. The view camera was probably used for its advantages in 
controlling the tilt of the plane of focus and controlling 
perspective.
