I was just having a look at what's on that well-known auction site, and
looked through a few feedback profiles. Can anyone shed any light on
why on earth so many people feel possessed to write 5 A's and 15 +'s
after their comments?? Who started it, doesn't anyone realise that it
is quite meaningless, and does it happen anywhere else on the web or in
the real world?

I don't know who started it, but it's been that way almost since the beginning of eBay. Looking in my own feedback history, I see quite a few A+ and A++ in 2000, growing use of multiple !!!! by late 2000, and the first AAA+++ is in November of 2000, though that's just in my own feedback and it might have started sooner.

Personally I try to leave more meaningful feedback, saying whether the goods were in the condition described in the ad, shipping was prompt, etc.
