"Assuming the built in meter is matched to the lens how would one know
the angle of coverage from an old sekonic hand held for example?
Would it not be wise to have a meter that covers the same angle as the lens?

Use an incident meter, like the old Sekonic Studio, or a Minolta. Unless
you're getting into serious Zone system, you'll get better results almost
every time. That's, by the way, the principal of metering your palm. Angle
doesn't much matter.
