micky,

it is always best to take "night shots" near dusk or at early morning to use the small amount of ambient light that is in the sky to illuminate areas not in the main subject.  it will take a little bit of practice to see when the time is right (which really only lasts a good 20 minutes) but once you get the hang of it you will be pleased with the results.

also, in terms of getting the best exposure in areas when the sky is dark it is best to use a film that you can pull in the processing to reduce the amount of contrast.  some highlight areas will not turn out well when you shoot this film during the day, but if you reserve a body just for this film you will have no problem.

as far as metering goes, i usually always use incident to measure light on the subject, but if you are not going to drag one around i would use spot on subject and let the rest fall into place.  with print film you certainly have more latitude with which you can bracket, and i would recommend .5,1, and 1.5 stop increments if you think that this deviation from correct exposure will render a good photograph (i.e. exposing for the Seine and allow E. tower to be in silhouette or glowing - whichever is the case)
